We've just discovered (and tried) a bulk recipe for no-knead artisan bread that is easy AND delicious. The recipe and procedure is at the Mother Earth News website (I know!).
We've recently tried several different recipes for bread products, but all have fallen short until now. It's nice to know that this yeasty ball-o'-goodness doesn't have high-fructose corn syrup and preservatives, and did I mention that it's delicious? Yes, I know I did, but it merits the repeat.
I have some in the oven right now, and it smells so good.

How did the bread turn out?
Oh TH2, it is SO GOOD. I wouldn't have believed that a no-knead bread could have such a nice texture. The taste is light, fresh, and not too yeasty. The crust is very crisp and not too chewy.
The loaf size as indicated in the instructions is too small for the fam; after we each had one slice from the first loaf, I baked two more loaves. Hours later, they've already been devoured.
All that made me hungry. Its 12:30 am EDT and now I am going to make a sandwich.

MCK: The sad thing is that I'm trying to cut way down on eating bread. I have to exercise serious self-control around this stuff.

Just baked the last of the batch this morning. Since it had aged a few days, the dough tasted a bit like sourdough, which I do NOT like.
that means you don't have to eat that loaf!! perfect way to cut down on bread consumption! :)
I need to stop eating bread myself. Sheesh. It's like a staple down here it seems. Always eating some sort of carbs!
MCK, believe it or not, I'm supposed to avoid whole grains post-gallbladder surgery. The toast I used to make for myself every morning no longer tastes good, so I've got that on my side. I've been forcing myself to eat yogurt, but don't like a cold breakfast. Maybe the hot coffee will make up for it. (Coffee hasn't been tasting particularly good, either.)
